Hi! Dr. Elijah here.
I’ve had to go gluten free-ish this year because I was diagnosed with Hashimoto’s disease (an autoimmune thyroid disorder). And because gluten increases the antibody production against my thyroid, I've had to rethink my diet and experiment more in the kitchen with gluten-free foods.
Thankfully, my hubby does most of the cooking.
Now, I do know how to cook because my mom was a Home Economics major in college and for those old enough, I took a Home Economics class in high school. However, I just don’t enjoy cooking like my husband does.
So, my contribution is getting on Pinterest and going crazy with gluten-free recipes.
I thought I'd pass along some of my favorite recipes to you.
I love a lot of flavor in food, just like my men. Just kidding. ;)
